The morning after Thanksgiving…
Digging around the refrigerator the morning after Thanksgiving is part of the holiday for me. Breakfast the day after includes mashed potatoes with stuffing and corn on top. That breakfast is looked forward to as much as the feast. By day three turkey sandwiches are starting to lose their appeal. Having been raised by parents who were staunchly entrenched in an immigrant mindset, nothing is wasted. That is when the turkey carcass becomes the most amazing jumping point to create a delicious, rich soup.
Take meat off of bone. Place carcass and place in 1/3 pot of water with one large onion diced.
Boil and turn down very low for 3-4 hours. Next, dice and add the vegetables and continue to cook for 2-3 more hours. At the end you can add egg noodles. Return diced turkey to soup before serving.
2 stalks of celery
Salt and pepper to taste (use liberally)
Cook for 3 more hours.
Now you have finished all the turkey and haven’t wasted a bit. Enjoy!
